Summertini

The "Summertini" is fruity and refreshing cocktail for summer entertaining.  Perfect for sipping on a warm summer afternoon.

1.5 oz. vodka
1.5 oz. peach schnapps
1 oz. limoncello
2-2.5 oz. pomegrante or cranberry juice (pomegrante juice in the picture)

Sparking wine/champagne
Sugar to rim glasses
Fruit for garnish (white & yellow peach slices & blackberries in picture)
Mint leaf garnish
Optional: add 1-2 tsp. of simple syrup to taste for a sweeter drink

Add vodka, peach schnapps, limoncello, pomegrante or cranberry juice to a martini shaker filled with ice. Shake and strain into a martini glass that has been rimmed with sugar.  Top with a splash (to taste) of sparkling wine or champagne and garnish with fresh or frozen fruit (keeps the drink cold); top with a sprig of mint.

The inspiration for this drink was the signature cocktail, "The Wonderful Drink", at the wedding of Chris and Jennifer, The Abernathy Center.
